What We've Been up to During Quarantine

With Malcolm in the stroller and the camera and tripod in the basket beneath him, we've been venturing out to all sorts of places for our morning walks. It started as just around the neighborhood, but slowly we've been re-entering the world as it cautiously opens back up. Fox Lake Park, Sand Point Park, and a few others have given us gorgeous vistas in this dark time. It is nice that we are rediscovering our own city and some places here in Titusville that we may not have been to in a while.

Baking

Mini Tart with Lemon Curd and Raspberry Coulis


It feels as if I have been endlessly in the kitchen whipping up some sort of pastry or dessert.

Combining several different recipes, I was able to create a mini fruit tart completely from scratch. The crust, then lemon curd, then pastry cream, and finally topped with a raspberry coulis. YUM!



Meringue Cookies

They may not be pretty, but the meringue cookies that I made came in handy for all sorts of different snacks. By themselves, they were crunchy and reminiscent of toasted marshmallow. Paired with a vanilla wafer, some left over lemon curd, and then refrigerated, they were soft and sweet! But... By combining them with a vanilla wafer, peanut butter, a banana slice, and then refrigerating, they were AMAZING!







Malcolm's Room

We've made some slight additions to Malcolm's room, and I couldn't be more impressed with how it has turned out. First, from Christina, we have new artwork for the wall!

Next, we added some blackout curtains, but we may be changing these because they are too long.
