Breakfast Sausage

Somehow, our morning routine has come to involve store-bought breakfast sausage, and although nice, I've noticed the price-tag is not so nice on the wallet. With a little research, I was able to create an amalgamation of simple, few ingredient, recipes into something I think worked well.
-1 Tablespoon Maple Syrup
-1 Tablespoon Brown Sugar
-1 Teaspoon Salt
-1/4 Teaspoon Red Pepper
2. I would recommend covering the bowl with plastic wrap and refrigerating for at least an hour (if not overnight) to let the concoction marinate.
3. Preheat a pan on medium-high heat.
4. While the pan is preheating score the meat into however many patties you are planning on making (I learned that trick from watching Rachael Ray). As you can see below, I have separated the meat into eight sections. Yes, I understand I haven't quite nailed the symmetry.
5. Once your pan is hot, spread a layer of butter (oil, etc.; whatever you prefer) and form your patties -remembering to add a dimple to the center for more even cooking.
6. Cook each side for about 4 minutes.
7. Enjoy! We have been eating them on oatmeal English muffins. Yum!
On a side note: Although I have been really enjoying them, I think they could use a bit more spice. Any suggestions?
